In Cuba, there's more than one way to skin a pig

What would Cuban cuisine be without that little lo-cal critter, the pig? Pork is very popular in Cuba. It's also cheaper and easier to find than beef. 

There are a ton of recipes for Cuban-style pork. Babalu Blog posted one that looks good. And here's another from Three Guys from Miami. If you have any recipes for Cuban-style pork, also known as lechon, send them in. Yummy.
